I'm buying new side mirrors for my '74 and see that I have 2 options: convex or flat side mirrors. I've never had convex before and was wondering how other people like it and for what reasons. Thanks.

I think the flat sided mirrors ended sometime in '74. Functionally, they are the same AKAIK - just pick what you like or that matches your Jeep.

Does anyone know where I can get the black plastic piece that goes right behind the mirror and holds it in place? That's all that's broken and I hate to waste $$$ on a whole new assembly.

Try Chrysler. It sounds like a part that would not last long in a junkyard.
